Summer Peach Sandwich Cookies

These peach-inspired sandwich cookies are soft, buttery, and filled with homemade peach jam for a fresh and fruity dessert that feels perfect for summer. Their delicate sugar coating and peach-like appearance make them a beautiful treat for parties, afternoon tea, or seasonal dessert tables. Although shaping and filling the cookies takes a little extra time, the recipe itself is simple and fun to make.

Ingredients

    Cookie Dough

    • 80 g unsalted butter
    • 140 g powdered sugar
    • 2 eggs, room temperature
    • 6 g vanilla extract
    • 10 g fresh lemon juice
    • 370 g cake flour

    Peach Filling

    • Fresh peaches, peeled and diced
    • Sugar, to taste
    • Lemon juice
    • Water
    • Peach skins (for natural color)
    • Optional: rose food coloring or cactus fruit powder diluted in water

    Decoration

    • Fine sugar
    • Mint leaves


Instructions



1. In a mixing bowl, beat the softened butter and powdered sugar until smooth and creamy.

2. Mix in the eggs, vanilla extract, and fresh lemon juice until the mixture is fully combined and smooth. Mix until fully combined.

3. Sift in the cake flour and stir until a soft dough forms. Cover the dough and chill it in the refrigerator for approximately 30 minutes before baking.




4. Divide the chilled dough into 18 g portions and roll into small balls. Arrange on a baking tray and bake at 170°C for approximately 15 minutes or until lightly golden.

5. To prepare the peach filling, place peach skins, diced peaches, water, sugar, and lemon juice into a saucepan. Simmer over medium-low heat until the liquid develops a pinkish color and the peach skins lose their color. Remove the skins, then continue cooking the peaches until the mixture thickens. Let the jam cool completely. If a deeper pink shade is desired, stir in a small amount of diluted rose coloring or cactus fruit powder.

6. Once the cookies have cooled, carefully carve a small hollow into the bottom of each cookie using a knife or spoon. Fill the centers with peach jam and sandwich two cookies together.

7. Lightly brush or dip the cookies with diluted coloring, coat them in fine sugar, and finish with small mint leaves for a peach-inspired look.

8. For extra texture and flavor, you can mix the removed cookie crumbs into the peach filling before stuffing the cookies.
