Matcha Cream Cheese Crinkle Cookies

Ingredients

    For the Cookies

    • 35 g melted butter
    • 1 egg
    • 35 g granulated sugar
    • 0.8 g salt
    • 40 g cake flour
    • 6 g matcha powder
    • 3 g baking powder

    For the Matcha Cream Filling

    • 1 egg yolk
    • 20 g granulated sugar
    • 0.5 g salt
    • 4 g cornstarch
    • 60 g milk
    • 10 g butter
    • 2 g matcha powder


Instructions



1. In a mixing bowl, whisk together the melted butter, egg, sugar, and salt until the mixture becomes smooth and well combined.

2. Gradually sift the cake flour, matcha powder, and baking powder into the mixture, then fold everything together until a smooth, soft dough comes together. Cover the bowl with plastic wrap and chill in the freezer for about 45 minutes.

3. Once chilled, divide the dough into 16 g portions and roll each piece into a ball. Roll each dough ball thoroughly in powdered sugar until fully coated on all sides. Create a small indentation in the center of each cookie, then dust again with another layer of powdered sugar for a more pronounced crinkle effect.



4. Arrange the cookies on a lined baking tray and bake at 170°C (340°F) for approximately 20 minutes, or until the cookies are set and lightly cracked on top.

5. To prepare the filling, combine the egg yolk, sugar, salt, cornstarch, milk, butter, and matcha powder in a saucepan. Stir continuously over low heat until the mixture thickens into a smooth custard.

6. Remove the custard from the heat and strain it for a silky texture. Cover the surface directly with plastic wrap to prevent a skin from forming, then refrigerate until completely cooled.

7. Allow the baked cookies to cool fully before piping the chilled matcha cream into the center of each cookie.
