Instructions

2. Press the cooked egg yolk through a sieve, then mix it into the butter mixture until fully combined.
3. Gradually fold the cake flour and cornstarch into the mixture, mixing lightly until the ingredients come together into a smooth, pliable dough.
4. Separate a small portion of dough for the white details. Tint another small portion pink, then color the remaining dough gray.
5. Divide the gray dough into 10 g portions. Shape and assemble each cookie according to your preferred rat design, adding the white and pink dough for the facial details and ears.
6. Arrange the cookies on a lined baking tray and bake at 150°C for about 20 minutes, or until lightly set. Bake just until done to maintain a soft, delicate texture in the cookies.
