Chocolate Cream Hug Roll

Ingredients

Instructions


1. Prepare the Cocoa Batter

Heat the corn oil to approximately 70°C (158°F). Whisk in the cocoa powder until the mixture is smooth and fully combined. Stir in the milk, cake flour, and egg yolks, mixing until a smooth, lump-free batter forms.


2. Make the Meringue

In a separate bowl, beat the egg whites with the sugar and a few drops of lemon juice until soft peaks form.

Gently fold the meringue into the cocoa batter in batches, taking care not to deflate the mixture.



3. Bake the Cake

Pour the batter into a prepared baking pan and bake at 150°C (300°F) for approximately 30 minutes, or until the cake is fully set and springs back lightly when touched.

Remove the cake from the oven and let it cool completely before handling.


4. Prepare the Chocolate Cream Filling

To make the ganache, gently melt the whipping cream and chocolate together using a double boiler. Stir until smooth, then refrigerate until slightly thickened.

Combine the chilled ganache, whipping cream, and sugar in a mixing bowl. Whip until stiff peaks form, then transfer the mixture to a piping bag.



5. Assemble the Hug Rolls

Using a round cutter or mold, cut the cooled cake into circles.

Pipe a generous amount of chocolate cream filling onto one cake round and gently place another piece against it to create the signature "hug" appearance.

Decorate with bear-shaped cookies, pretzel cookies, chocolate beans, and green leaves as desired.
